Nearly every night, around midnight, I make myself a quesedilla. I'd like to think that I am making bold strides towards meeting my daily calcium requirement, but really, a gooey cheesy quesedilla is just the perfect close to a long day. The pairing a perfectly crisped tortilla with all that decadently rich cheese is completely irresistible to me. And on a particularly tough day (such as today) I might even be tempted to add
A few tablespoons of Salsa
Sprinkle of Kosher Salt
Slice avocado in half. Using a large spoon remove seed. Spoon out avocado onto a small plate and mash with a fork. Add salsa, lime juice and salt to taste. Serves 2.
I assume that everybody and their mom knows how to make a quesedilla but just in case..........

One Flour Tortilla
1/3 cup shredded cheese
Place tortilla in a fry pan over medium heat. Place cheese on half of your tortilla folding the other half over the cheese. Cook until a browned on one side, then flip. When the cheese is gently bubbling out, and the tortilla is a toasty brown you are ready to indulge!
