Behold, the sad sight of a brown banana. The last piece of fruit in the bowl. Make way for new apples and grapefruit Mr. Banana you are headed straight to the dumpster!















Or maybe not! With butter and sugar yesterdays trash becomes today's breakfast treat! (Wow, that sounds SO unappetizing!) But seriously, isn't it incredible how something as disgusting as an over ripe banana can become utterly irresistible given the right amount of butter, sugar and baking? So what are your favorite second run treats? Do dish!


Betty's Banana Bread

1 1/4 cups sugar
1/2 cup butter, softened
2 large eggs
1 1/2 cups mashed ripe bananas
1/4 cup milk
1/4 cup sour cream
1 tsp. vanilla
2 1/2 cups all purpose flour
1 tsp. Baking soda
1 tsp. salt
1 cup chopped nuts

Heat oven to 350. Grease the bottoms only of two loaf pans. Mix butter and sugar in a large bowl. Stir in eggs until well blended. Add bananas, milk, sour cream, and vanilla. Beat until smooth. Stir in flour, baking soda, and salt until just moistened. Stir in the nuts. Pour into pans. Sprinkle tops of bread with sugar before baking for about an hour. Serve with coffee.

At wendy's, they use the day old burgers and make the chili out of it. Sounds pretty nast, but it's pretty good chili and eliminates waste. Celebrate!
