When my husband first flew the nest his mother took the time to write the recipes for all of his favorite meals in a book. I don't believe that he ever thought to actually use it, to him it was merely a sweet gesture. I am the cook in our family and when this book hit my hands years later I knew what magic I held. When I let it be known that he would be enjoying Cornmeal Pancakes with Blueberry Sauce this past Saturday, Hubby immediately expressed his joy in the form of a rap.

Cornmeal Pancakes
1/2 cup cornmeal
1 cup boiling water
2 Tblsp butter
1 cup flour
2 Tblsp baking powder
1/2 tsp salt
2 eggs
3 tsp molasses
1 cup milk
Mix together the cornmeal, water, and butter. Beat in the remaining ingredients and let stand for 10 minutes. Cook the pancakes for a few minutes on each side in a greased griddle, over medium high heat, until light brown. Serve with blueberry sauce
Blueberry Sauce
1/3 cup sugar
1 Tblsp cornstarch
2 cups blueberries
2 Tblsp lemon juice
1/3 cup water
Combine the sugar and cornstarch in a pot. Stir in remaining ingredients. Cook over a medium high heat, stirring until thick.

For breakfast, Slickety Jim's Chat & Chew can be hit & miss, but it's a nice spot. Crave on Main St. is also really good (if it's nice, sit in the back outside). I hear Chill Winston's in gastown has a great weekend brunch (and good for dinner too). I've had good breakfasts & lunches at Brioche in gastown, but it's always busy and bustling & more of a cafe.
Sounds like Micah likes it. Did you see the recipe I blogged on Bako? And in Vancouver avoid the Mongolian Barbecue. Made 5 people sick and they had to fly to Japan the next day! Barf.
