Smokey Lentil Soup

As the countdown to holiday feasting begins I am finding it difficult to keep my calorie intake at a non-binging level. That leftover Halloween candy on my desk is certainly not helping matters. (I swear that I had M&M's sitting right here, I can't POSSIBLY have eaten the entire bag, can I? Oh yes, there is the empty wrapper.) I am beginning to view that darling little ceramic pumpkin with it's swirling vortex of temptation as the devil cast in stone and sugar. I've decided that I desperately need an ally around, a dining option that is deceptively sinful. High in fiber yet full of rich smokey flavor this soup is a foul weather friend to anyone in need of comfort, not calories.

Smokey Lentil Soup

8 oz smoked sausage, sliced (there are a surprising number low fat options out there)
2 carrots, chopped
2 stalks of celery, chopped
1 sweet onion, chopped
2 TBLSP fresh sage, chopped
1 tsp smoked paprika
1 bay leaf
2 cloves minced garlic
1 lb dry lentils, rinsed and picked over
8-10 cups broth (chicken or veggie)
sambal oleek

Cook sausage over medium heat in a large dutch oven. When it has browned nicely remove the sausage. If your sausages were oily remove all but 1TBLSP of the oil. If your sausages were lean add enough olive oil to the pan to equal 1 TBLSP. Add carrots, celery, and onion to the pan and cook over medium heat until they've softened. (I didn't try this, but I think that a can of diced tomatoes would be an excellent addition at this stage.) Add sage and paprika to the pan, heat for 1 minute, stirring often. Now add bay leaf, lentils, and broth to the pan. Bring the mixture to a boil, then cover pan and lower the heat to a gentle simmer. Cook lentils for 30 minutes or until they've softened. Add salt, pepper and sambal oleek* to taste.

*Begin with just a tsp or two per pot, sambal oleek is quite hot.

Souper soup recipe - can we get 'not on our shelf' ingreds - smoked paprika and sambal oleek at TJ's?

I adore TJ's but they often disappoint if you are looking for something specific. Try substituting sweet paprika for the smoked and adding a generous amount of Chipotle Tabasco in place of the Sambal Oleek. Let me know how it turns out!

I added the sausage back with the lentils. I think that's ok. I also added parsnips to the carrot/onion/celery stage and some chopped red bell peppers with the sage. I used some smoked salt I have for extra flavor since I don't have smoked paprika and could not find it anywhere. I used cayenne pepper for spice. I hope it turns out, it's on the stove right now!
