Three is a crowd (OF DELICIOUSNESS)
Why are steaks so often packaged in groups of three? With just a happy couple and a happy couple of cats residing in this house such packaging leaves me with leftovers every time. Should you find yourself in a similar situation, the following recipe stretches a single steak into a delightful dinner for two.
Steak Salad with Ginger Dressing and Fresh Mango
6 oz tri-tip or steak, grilled
7 oz butter lettuce, rinsed and torn into pieces
Ginger Dressing
1 medium mango, diced
Thinly slice beef across the grain. Toss lettuce with fresh herb dressing, begin with a small portion of dressing and slowly add more, tossing until each leaf is lightly coated. Divide salad evenly between plates and top each portion with beef and diced mango.
Ginger Dressing
1 tsp freshly grated ginger
1/4 tsp lime zest
1/8 cup lime juice
1/8 cup orange juice
1/2 tsp sesame oil
1/2 cup oil (choose a neutral flavored one, like canola)
1 tsp fresh minced basil
1 tsp fresh minced cilantro
1 tsp fresh minced mint
Place all ingredients in an empty jar or other lidded container and shake until well mixed.

This sounds yummy! Now, if we can just find a mango within 60 miles of home. Maybe a peach or nectarine?
