Chili for Two


Cooking for two can be a pain when one is dieting and the other is not. It can be difficult to find a recipe that is both low in calories and satisfyingly delicious. With a just a few additional ingredients this chili can please both those who feast and the famished.
Shown here dressed up with sour cream, cheddar, and chips for dipping, this chili can satisfy the heartiest of appetites.
What makes this a true gem of a recipe though, is the fact that when served plain this chili is a perfectly healthy dinner choice.
(I originally wrote "served naked" rather than "served plain". Then, I realized that it sounded as though i was nude rather than the chili!)

Chili for two
1lb lean hamburger or ground turkey
1 onion diced
1/4 cup chili powder
2 cloves garlic chopped
1 tsp. salt
1/2 tsp. pepper
2 14.5 ounce cans diced tomatoes
2 ounces canned diced green chilies or jalepenos
1 can each kidney and black beans, drained
15 oz can of tomato sauce

Brown meat, onion, and garlic in a large pan over high heat. (If you buy really lean meat you shouldn't have any fat to drain off)
Stir in chili powder, salt, and pepper. Cook for 1 minute, stirring constantly.
Open up all those cans and stir in the rest of the ingredients. Bring the chili to a boil. Reduce heat to low, cover and simmer for 30 minutes, stirring often.
For those who are dieting serve with a salad.
For a good time top with cheese, sour cream, and chopped raw onion. Serve with chips.

I don't know if I will be able to use as many exclamation points as the last post – but, this seems to be a delish dish and the perfect compromise for any food feuding couple!!!

I saw that very chili, it was but a wee lad simmering on the stove, now its all grown up, sporting its own sour cream and chips, o where does the time go.
