A Tisket, A Tasket, Egg in a Basket


I assume that many people who viewed V for Vendetta left the theatre with an inflamed distrust of the government. I, Eviedee, lover of all things food related returned with a burning desire to try Egg in a Basket. Hot, crisp, buttered bread with a perfectly cooked egg nestled in the middle, I had to try it! This bread and hen did not disappoint. Now that Mother Nature is serving up chilly mornings, I can think of no better dish to accompany them.

Egg in a Basket

1 1/2 Tblsp. butter
1 egg
bread

Melt half the butter in a skillet over medium heat. Cut a hole in your bread.*
Place your bread and the cutout in the skillet, making sure that each is well coated in butter. When the bread is golden brown flip it over add the rest of the butter. Cholesterol is delicious! Gently break your egg and put it in your bread hole (hee hee). Sprinkle egg with salt and pepper. Cook to desired doneness


*I like to cut mine into the shape of a heart so that my husband knows that I love him. You however, may hate your hubby. In that case give him a circle and I think your message will be clear!

My mother used to make these for us all the time when we were little, but I had totally forgotten about them since! I need to try them again...

I wonder what other childhood favorites I've forgotten about in my old age? I'll have to plunder her recipe box some day.

Wow - I had completely forgotten how much I adore these, although when we were younger, we used to call them "Hole-in-Ones."

I think I need this. Now.
