Thanks a Brunch



What could be better than a lazy Sunday morning breakfast? Enjoying all those same foods when you roll out of bed at noon of course! Oh brunch, how I adore thee. You make it socially acceptable to dine on eggs in the middle of the day.

This savory cheesy quiche spiked with green chilies is a regular at my brunch table. All it needs for accompaniment is fresh fruit.

Sunday Mornings are Made for Quiche

1 refrigerated pie crust at room temperature (or your own lovingly prepared home made crust)
1/2 cup diced ham
1 (4 ounce) can green chilies, drained
2 green onions, chopped
2 cups shredded cheese
1 1/4 cups half and half
4 eggs
1/4 tsp salt

Preheat oven to 425 degrees. Press crust into 9 inch deep pie plate. Press foil over crust to hold shape. Bake for 5 minutes. Remove from oven, remove foil. Reduce temperature to 400 degrees.
Sprinkle ham, then chilies, then green onion and cheese over crust. Beat half and half, eggs and salt and pour into crust.
Bake quiche for 45 minutes or until a knife inserted into the center comes out clean. Let quiche stand for 5 minutes. Cut into wedges and serve. (Preferably outside on a glorious fall day!)
