Souper Trouper


Hey there Sugar Tits! Though you are made of delicious white chocolate I WILL NOT release you from your cake plate prison. You and your cookie friends are DOOMED, for I have found my will power! (I thought that I had left my will power in the cookie jar, I looked and looked, and of course I had to clear all those pesky cookies out of the way.)
I have been sick all month long which meant no Krav Maga for me. Though I have no problem attempting to kick and hit my fellow classmates with a stick, I had reservations about spraying them with my special blend of toxic snot. Today I FINALLY felt well enough to return, and just one class helped me to give the sugar monkey on my back the ol heave ho!
My friends and co-workers are planing to spend the month of January consuming diet shakes and crazy liquids to help lose their marshmallow middles. My love of food and flavor runs tooooo deep for such extreme measures. I am hunkered down in the diet trenches with fruits, veggies, and gallons of Souper Soup. Tasty, satisfying, and full of fiber, it just may make a souper trouper* out of you!

Souper Soup
2 tablespoons olive oil
1 onion, chopped
4 cloves garlic, chopped
1-2 spoonfuls of tomato paste
10 cups stock (beef, chicken or veggie)
1 cup red wine
pinch of pepper flakes
1 can diced tomatoes
1 can of beans ( I usually use kidney or black beans)
1 tsp dried herbs (I like 1/2 rosemary and thyme)
1/2 tsp salt (more or less depending on the salt level of your canned goods and your taste)
1/4 tsp pepper
2 cups cleaned and chopped vegetables (carrots, green beans, mushrooms, whatever!)
Saute onion in oil until translucent. Add garlic and tomato paste and cook over low heat, stirring frequently, for a minute or two. Stir in the rest of the ingredients. Cooking times will vary depending on vegetables used. I usually chop the firmest vegetables first and add them to the pot as they are prepped. Let the whole thing simmer for about 20 minutes or until all the vegetables are tender. Enjoy! (Several times a day if you wish!)

*Who doesn't love an ABBA reference?

Gonna have to try this soup! After Santa delivered, I was naughty! No cookies left in my house!

dear ms. eviedee: this souper soup sounds wonderful, and yes, i love an ABBA reference! one question perhaps you may know the answer to: i want to make my own beef stock - what kind of meat should i use (i know it should be beef).
