This pasta was the perfect fast weekday meal for me. Perhaps you would enjoy it too?

Zucchini Pasta

2 Tblsp olive oil
2 zucchinis, sliced
2 cloves garlic, chopped
2 cups cooked pasta
2 Tblsp chopped basil
2 Tblsp chopped cilantro
2 Tblsp butter
1/2 cup Parmesan cheese
Heat oil in a large high sided pan over medium heat. Add zucchinis and cook until the skins turn bright green, and the flesh turns slightly translucent. Add garlic and cook until it has slightly softened. Turn heat to low and add the butter, herbs, and pasta, tossing gently to combine. Add salt and pepper to taste. Divide pasta between two plates and top with parmesan.
