Sew Delicious!

Rather than cooking I have been spending my free time pondering the complexities of my sewing machine. It all began with completing six aprons for a friend. Then, the gals at work got in on the act and I made six more. Thanks to a recent trip to the fabric district you can be certain that the madness won't end there. Yesterday, in addition to aprons, I had a desire to whip up some fine fare for my hubby. What a girl needs at a time like this is a true workhorse of a recipe, one that requires minimal preparation. A dish that will merrily cook away while you sort and stitch. This recipe is not healthy, nor is it company fare, but my darling husband and I are quite fond of it.

Chicken Cheese Rolls

Preheat oven to 400 degrees. Using a meat mallet, pound four chicken breasts flat. Spread each breast with 1 tablespoon butter and 3 tablespoons chive cream cheese. Roll up chicken and wrap each little parcel with two pieces of turkey bacon. Place the chicken in a glass pie pan and bake for 40 minutes. Then, broil for 5 minutes until the bacon is brown and crisp. Serve rolls over rice to soak up the savory butter goodness.

You are so stinkin' cute! I am still trying to find that balance between crafting, making dinner, working out, etc. Usually something has to give.
