Micah was off to St. Louis this week. When asked what I would do while he was away, garlic and onions were all that came dancing into my head. I knew that I would be a bit lonely, but no one to talk to meant that I had no reason to open my mouth, and many opportunities to shove it full of garlic. Here is what I whipped up, a consolation prize, brimming with lemon and brine.
Juice from two lemons (about 7 Tblsp)
3-5 cloves of garlic peeled and minced3/4 cup olive oil
1 1/2 tsp oregano1/2 tsp basil
1 tsp kosher salt1/2 cup english cucumber, diced
1/4 cup diced red onion1/4 cup kalamata olives, sliced
1 can of beans* rinsed and drained3 cups cooked whole wheat rotini pasta
crumbled fetaWhisk together lemon juice, garlic, herbs, and salt in a pretty bowl. Whisk in the olive oil. Add all other ingredients except feta and toss gently to combine. Season to taste with pepper and more salt if needed. ** Top each serving with feta before enjoying.
** Remember, your many tears may be salty enough
