After all the cupcakes, poutine and burgers I've consumed lately, I knew that I would do whatever it took to get my grip on some green Sunday night, even if I had to paw through the neighbor's garden with my bare hands! (I didn't actually raid my neighbors garden, fortunately for him, Vons is open till midnight.) It is absolutely INDECENT how much I adore shopping for summer produce. Every bin seems as though it must be mismarked, each item is so cheap and abundant. As I make my way through the aisles I have to restrain myself from filling the basket to the very top. (Come now Eviedee, we must leave room for the milk!) Here is what I made with my hearty haul.
So Good to be Home Slaw
First prepare these ingredients and toss them together in a bowl
1 head of cabbage shredded (or if you are super fly like me 1/2 red and 1/2 green)
3 carrots, grated
2 green onions, sliced
1 chicken breast, poached and shredded(you could also do one of those rotisserie chickens but the lone bird that you find left in the case at midnight will be a foul creature)
small handful of chopped mint and cilantro
Then, in your blender or food processor mix together
1/2 cup peanut butter
1/2 cup seasoned rice vinegar
1 Tblsp. soy sauce
2 Tblsp. sesame oil
1-2 tsp. sambal oelek
1 tsp grated ginger
The juice of a single lime
Pour the dressing over the salad and mix gently. Fill a large bowl with slaw and as you chew, allow each mouthful to remind you that the best place to be on a hot summer night is your very own kitchen.

mmm, love it! looks great...a perfect antidote to poutine overload :)
Off to the local mini mart (James Store) to gather dressing ingreds. Oops, that probably won't produce seasoned rice vinegar OR sambal oelek. Guess it's as good an excuse as any for a 120 mile round trip to Trader Joes.
